How many bananas do you need for banana bread?
It may vary depending on the recipe but as a general rule of thumb, you'll need 2-3 overripe bananas for a loaf of classic banana bread. This is roughly about 3 medium or 2 large bananas. For our Spotty dry banana bread mixes, we recommend 3 overripe bananas (350g).
Whilst overripe banana is the best, you may also use frozen bananas in a banana bread recipe as long as you thaw them appropriately. Make sure to blot them with a paper towel to remove excess liquid before adding them into your mixture.
Would I need to change anything to accommodate for one less banana?
We do not recommend baking with less banana as you will lose approximately 100g of moisture, mix and flavour for every lost banana . If you are trying to lower your carbs or sugar by removing the banana, Spotty has a sugar free banana bread option to support your lifestyle..
Do you need ripe bananas for baking?
Always go for overripe bananas as they are sweeter and bring out the rich banana flavour we all love. In a nutshell, keep any old, overripe, spotty or brown bananas as they are perfect for baking!
What’s an easy way to ripen bananas for baking?
While there are several options, we recommend the oven method as not only does it soften the bananas but it brings out the banana flavour as well.
Bake unpeeled bananas at 160°C for 20-25 minutes until the peel has turned black. We recommend turning the banana over half way through baking. Scoop the banana pulp out once cool and mash before adding to your recipe. We think this approach is the best way to get the sweetness of overripe bananas into your mix which really gives your banana bread that ultra bananary hit!
Can you tell me what size loaf tin you used? What were the proportions?
The best tin to use is a large size tin - this is about 21cm long, 11cm wide and 7cm high. You will get the best banana bread results using a tin this size.
How long should I bake it on a smaller loaf pan? Same temperature and time?
The smaller the tin size, the higher the loaf will rise. You will be using the same quantity of mix so it generally will be the same bake time and temperature however we recommend checking the loaf towards the end of the baking time to ensure it is cooked properly through.
Do I need to add baking powder and baking soda to the Spotty Banana Bread mix?
No! That's the beauty of using a mix like ours. It's already premixed to perfection! We've even included organic cinnamon, vanilla bean and salt for additional flavour!
If you want to add anything to the mix, you could always add chocolate chips for the extra flavour!
How to freeze, store and thaw your banana bread?
Great question - who doesn't love to have a stash of banana bread for when you need it! The first thing to do once your banana bread has cooled after baking is slice with a sharp serrated bread knife. Make sure you have a freezer proof container handy and place a sheet of baking paper between each slice before putting it in the freezer. As banana bread is generally pretty moist, you may find that the slices freeze together and it may be difficult to remove one slice at a time if you don’t. Spotty banana bread lasts up to three months in the freezer so you can easily plan your treats and snacks ahead of time!
When you are ready to take a slice of banana bread out of the freezer, you can prepare it in a few ways.
1) You can thaw your slice overnight. We recommend thawing in the fridge if you’re in a hot climate as there are no preservatives in this delicious healthy banana bread!
2) If you are in a hurry, you can pop a slice straight in the toaster. You might have to toast it on a higher level to thaw and toast it right. Then lather it in butter because hey, who doesn’t love butter on their banana bread!

Does the banana bread mix use wheat flour?
The traditional spotty banana bread mix uses wheat flour along with spelt flour for a delicious loaf but our gluten free, sugar free and protein banana bread mixes use a gluten free flour combination so do not use wheat flour.
